Here’s a tasty Malva Pudding recipe to warm your soul!
Ingredients
For the Pudding:
- 1 cup (200g) sugar
- 2 large eggs
- 1 tablespoon apricot jam
- 1 1/4 cups (150g) all-purpose flour
- 1 teaspoon baking soda
- A pinch of salt
- 1 tablespoon butter (melted)
- 1 teaspoon vinegar (white or apple cider)
- 1/2 cup (125ml) milk
For the Sauce:
- 1 cup (250ml) heavy cream
- 1/2 cup (125ml) sugar
- 1/2 cup (125ml) butter
- 1/2 cup (125ml) hot water
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven:
- Preheat your oven to 180°C (350°F).
- Prepare the Pudding:
- In a large mixing bowl, beat the sugar and eggs until thick and light in color. Add the apricot jam and mix well.
- Sift together the flour, baking soda, and salt. Gradually add to the egg mixture, beating continuously.
- Melt the butter and add it to the mixture along with the vinegar and milk. Mix until smooth.
- Bake the Pudding:
- Pour the batter into a greased 8×8-inch baking dish or a similar-sized ovenproof dish.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Prepare the Sauce:
- While the pudding is baking, combine the cream, sugar, butter, hot water, and vanilla extract in a saucepan. Heat over medium heat until the butter is melted and the sugar is dissolved. Do not let the mixture boil.
- Soak the Pudding:
- Once the pudding is done, remove it from the oven. While still hot, pour the sauce evenly over the pudding. Allow it to soak in completely.
- Serve:
- Serve the Malva pudding warm, with extra sauce if desired. It pairs wonderfully with custard, whipped cream, or vanilla ice cream.
Tips:
- Texture: The pudding should have a spongy, soft texture and absorb the sauce completely.
- Variations: For an extra twist, you can add a splash of brandy or sherry to the sauce.
- Serving: This pudding is best enjoyed warm and fresh, but it can be reheated gently if made in advance.
Enjoy your delicious, traditional South African Malva pudding!
