Here’s a tasty Samp & Beans recipe.

Ingredients:

  • 1 cup dried samp (cracked corn)
  • 1 cup dried sugar beans (or any other dried beans)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper
  • 2 bay leaves
  • 4 cups water or vegetable broth (more if needed)
  • Optional: 1-2 tomatoes, chopped or 1 can of diced tomatoes
  • Optional: 1 teaspoon curry powder or paprika for additional flavor

Instructions:

  1. Preparation:
    • Soak Samp and Beans: Place the dried samp and beans in separate bowls. Cover them with plenty of water and soak overnight (8-12 hours) to soften them. This helps to reduce cooking time and ensures even cooking.
  2. Cooking:
    • Drain and Rinse: Drain the soaked samp and beans, and rinse them under cold water.
    • Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent and fragrant, about 3-5 minutes.
    • Combine Ingredients: Add the drained samp and beans to the pot. Stir to combine with the sautéed onions and garlic.
    • Add Liquids and Spices: Pour in the water or vegetable broth, and add the bay leaves, salt, and black pepper. If using, add the chopped tomatoes or canned diced tomatoes, and any additional spices like curry powder or paprika.
    • Simmer: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for about 2-3 hours, stirring occasionally, until the samp and beans are tender. You may need to add more water or broth during cooking if the mixture becomes too dry.
  3. Finishing Touches:
    • Check for Doneness: The samp and beans should be tender and the mixture should have a creamy consistency. If needed, continue to cook until the desired texture is reached.
    • Adjust Seasoning: Taste and adjust the seasoning with more salt and pepper if necessary. Remove the bay leaves before serving.
  4. Serving:
    • Serve Hot: Serve the samp and beans hot, either as a main dish or a side. It pairs well with meat dishes, such as stews or braais (barbecues), or can be enjoyed on its own for a hearty, nutritious meal.
