Tasty Tuesday: Vetkoek

Here’s a vetkoek recipe to satisfy your cravings!

Ingredients:

  • 500g all-purpose flour
  • 10g instant yeast (or 20g fresh yeast)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 300ml lukewarm water
  • Cooking oil for frying

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, yeast, salt, and sugar. Make a well in the center.
  2. Mix the Dough:
    • Gradually add the lukewarm water to the dry ingredients, mixing with a spoon or your hands until a soft dough forms. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  3. Let the Dough Rise:
    • Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Shape and Fry the Vetkoek:
    • Punch down the risen dough and divide it into small balls (about golf ball size). Flatten each ball slightly with your hands to form a disc shape.
  5. Heat the Oil:
    • Heat cooking oil (about 3-4 cm deep) in a large, heavy-bottomed pot or deep fryer over medium-high heat until hot (about 180°C / 350°F).
  6. Fry the Vetkoek:
    • Carefully place the shaped vetkoek into the hot oil, a few at a time, depending on the size of your pot. Fry for about 2-3 minutes on each side or until golden brown and puffed up.
  7. Drain and Serve:
    • Remove the vetkoek from the oil using a slotted spoon and drain on paper towels to remove excess oil.

Serving Suggestions:

  • Sweet: Serve vetkoek warm with syrup, honey, jam, or caramelized sugar.
  • Savory: Fill vetkoek with curries, minced meat, cheese, or any savory filling of your choice. They are also delicious with boerewors (South African sausage) or biltong (dried meat).

Tips:

  • Ensure the oil is hot enough before frying to prevent the vetkoek from absorbing too much oil.
  • Fry in batches, ensuring not to overcrowd the pot, which can lower the oil temperature.
  • Vetkoek are best enjoyed fresh and warm, straight from the frying pan.
